I live south of Watts Bar on Chickamauga Lake. A few years ago I hunted down that Watts Bar course. When I found it, it was a loose floater with buoys missing in about five feet of water. It wasn't skiable at that time. The water conditions aren't bad for a public place to ski if the course was maintained.
It is so much easier to freeski without going to the trouble of setting up a course. You will be skiing in 1-2 minutes, no cranky fisherman hassles, you can choose a calm or rippled part of the lake to ski in, no expense of a slalom course, your boat stays cleaner, more time with your wife and little kids. Freeski gets you in better shape. Freeski is a no brainer.
I had a RLX with a bimini for 14 years. You are right on, the bimini does somewhat restrict access to the bow. The factory bimini that I had attached to the windshield so it was a higher type bimini instead of some of the lower mounted biminis.

Will Asher is incredible. Will Asher can go to any lake, anywhere in the world and run 3+ at 41. Will runs about 17 more buoys than you do. That makes Will about 17 buoys stronger than you. Short answer, you have to get stronger to improve your offside.
