@So_I_Ski humor me, bypass it or test pressure and see what happens - it's an easy test and costs nothing. Sometimes when I know something can't be the problem I get a surprise.
The 3.5 pressure is what I expect for a carb; totally different beast then fuel injection. Just need to keep the bowls full, not supply a hi pressure fuel injector stream. Do you know what pressure the pump makes - I don't think our Sportster has a separate pressure regulator. If it's a low pressure pump try bypassing the regulator. My guess is the regulator is your problem - any way to test pressure?
Note - the 4601 hp is listed with a working pressure of 6psi - should be able to bypass regulator as a test w/o overwhelming the floats. Then if it's fixed or runs rich you know the regulator is the problem. If no change it's in the carb.

My buddy's carbed 350 97 Sportster came stock with an electric pump. EFI was a more expensive option. If the pump pressure was too high it would be overwhelming the floats and running rich. Would be easy to check fuel pressure and wondering if you have a fuel regulator - the Sportster has a low pressure electric pump, no regulator.
@KRoundy Congratulations! I see we are neighbors - Wed evenings I am part of a foursome we call the "Wednesday Night Men's Dinner Club" at Bow Lake. An interesting test would be to have a a helper CAREFULLY pour fuel into the carb as it starts to stall out and see if it comes back to life. That will tell you that fuel flow is the problem. Please have fire extinguisher handy for this test.
BTW, does it stall out if brought up to these RPM's in neutral, or only under load??
I am a veterinarian, not a physician, but it should be universal that you treat the patient, not the Xray, MRI, CT - if I have no symptoms and something like a tumor is not growing, I am going to opt for "watchful waiting".
I love skiing the course; wish my 61 yr old body would let me do it every day. Free skiing just doesn't do it for me any more - to the level that I would prefer to stay home and do chores if I am not seeing the course. "Hi everyone, my name is Dave, and I am a course addicted skier".
When I took my wing off, a very wise skier commented, "you know, someone smarter than you designed that ski to use that wing". It's back on and I ski better.
I instantly improved from making half my 32mph 15's to most/all of them, and ran my first batch of 22 off's ever. My change - wing from 7 to 8. I don't understand why one would remove a tool that aids in tuning the ski.
@Ed_Johnson I want to hit the awesome button 99 more times! At 61 yr I am thrilled to ski 2-3 times a week and continue to improve and hope to ski in to my 80's. Old Guys Rule young man!!
20 some years ago my buddy was pulling hard across the wake as his rope broke at the handle. Shock tube didn't keep the rope from hitting my son just above the eye. He was 18 months old in mom's lap at the time. Often wonder if this is why he has never shown an interest in the sport I love :(
I upgraded from a 1990's ski to a 2016 model 2 years ago. Like going from a Model T to a brand new car. Please shop for a newer ski, you won't regret it.
50 years ago, seems like yesterday. I was 11; remember the portable TV being wheeled in to the classroom. What an amazing & special time to be part of planet Earth!
